weekend spiced apple zucchini raisin pancakes

Who doesn't love a leisurely weekend breakfast? Some of the best comfort foods are made during these special moments. I recommend serving these with butter pecan syrup, but this morning, we enjoy them with homemade Molasses Currant Syrup.

Ingredients

  • 2 cups self rising flour
  • 1 tablespoon dark molasses
  • 1 - egg
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ginger, freshly grated
  • 1 pinch allspice, ground
  • 1 pinch sea salt
  • 1/2 cup dark brown sugar
  • 1/2 cup cream of wheat, quick cook style
  • 1 tablespoon vanilla
  • 1/2 - zucchini, shredded
  • 1 - small apple, shredded
  • 1/4 cup raisins
  • 1/4 cup sultanas
  • 1/4 stick unsalted butter, melted
  • - buttermilk

How To Make weekend spiced apple zucchini raisin pancakes

  • Step 1
    Place all dry ingredients is a mixing bowl. Mix with a fork, then sift twice.
  • Step 2
    Place wet ingredients, save buttermilk, in a separate bowl. Beat for 1 minute.
  • Step 3
    Combine wet with dry. Then add a little buttermilk at a time until you get a nice, wet batter. Whisk well.
  • Step 4
    Fold in zucchini, apples, sultanas, and raisins.
  • Step 5
    Allow to rest for 5-10 in the refrigerator.
  • Step 6
    Butter your griddle, then cook on medium.
