weekend spiced apple zucchini raisin pancakes
Who doesn't love a leisurely weekend breakfast? Some of the best comfort foods are made during these special moments. I recommend serving these with butter pecan syrup, but this morning, we enjoy them with homemade Molasses Currant Syrup.

Ingredients
- 2 cups self rising flour
- 1 tablespoon dark molasses
- 1 - egg
- 1 teaspoon cinnamon
- 1/8 teaspoon ginger, freshly grated
- 1 pinch allspice, ground
- 1 pinch sea salt
- 1/2 cup dark brown sugar
- 1/2 cup cream of wheat, quick cook style
- 1 tablespoon vanilla
- 1/2 - zucchini, shredded
- 1 - small apple, shredded
- 1/4 cup raisins
- 1/4 cup sultanas
- 1/4 stick unsalted butter, melted
- - buttermilk
How To Make weekend spiced apple zucchini raisin pancakes

Step 1Place all dry ingredients is a mixing bowl. Mix with a fork, then sift twice.

Step 2Place wet ingredients, save buttermilk, in a separate bowl. Beat for 1 minute.

Step 3Combine wet with dry. Then add a little buttermilk at a time until you get a nice, wet batter. Whisk well.

Step 4Fold in zucchini, apples, sultanas, and raisins.

Step 5Allow to rest for 5-10 in the refrigerator.

Step 6Butter your griddle, then cook on medium.
