I created this recipe to star two of my favorite cooking ingredients from my "summer place" It's both Cherry country and Maple Syrup Country. The original recipe called for Pecans, but I added Almonds because I think Almonds and Cherries taste great together. TBoth versions a wonderful for breakfast served topped with plain or vanilla yogurt. Sweetened with a dab of honey if you wish.

Ingredients For way up north granola

  • 1 c
    real maple syrup
  • 1 c
    vegetable oil
  • 2 Tbsp
    ground cinnamon
  • 2 Tbsp
    vanilla extract
  • 1/2 tsp
    almond extract
  • 1/2 tsp
    salt
  • 8 c
    rolled oats
  • 1 1/2 c
    chopped pecans
  • 1 1/2 c
    whole salted almonds smopked ones if you like)
  • 2 c
    dried cherries
  • 2 c
    additional m & m type candies as desired

How To Make way up north granola

    heat oven to 275^ In large bowl combine maple syrup, oil, salt, vanilla, almond extract and whisk together

    add oats and nuts, mix well.

    Pour out on baking sheets. With hand in a plastic baggie or plastic glove, gently press into thin layers, roast on center oven racks 30 min. Switch the pans and stir the mixture. then bake an additional 15 min.

    If you like your granola soft to eat with yogurt for breakfast, let it cool. Add the dried cherries and anything else you desire. store in sealed contao

    For trail-mix type granola. Stir and rotate the pans one more time. Bake an additional 15, cool add dried cherries, and candies as desired,
