This is a nice twist on "regular" pancakes. It goes well with fruit syrup (like raspberry).

Ingredients

  • 2 c
    flour
  • 1/4 c
    sugar
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 1
    vanilla bean
  • 2 c
    milk
  • 2 Tbsp
    vegetable oil
  • 1
    large egg, lightly beaten

How to Make Vanilla Bean Pancakes

Step-by-Step

  1. Combine first four ingredients in a medium bowl; make well in center.
  2. Split vanilla bean, and scrape seeds into a small bowl; whisk in milk, oil, and egg until blended.
  3. Add to well in dry ingredients, stirring until just blended.
  4. Drop batter by 1/4 cupfuls onto a lightly greased hot griddle, cooking until the top is covered with bubbles. Turn pancakes and cook other side.
  5. Serve.
