Ingredients

  • 4 - links breakfast sausage (pork or turkey), cut into 1/2-inch pieces
  • 1/2 medium red onion, sliced
  • 1/2 cup red bell pepper strips
  • 1/2 cup green pepper strips
  • 1 large jalapeno pepper, seeded and diced (optional)
  • 4 - eggs, beaten
  • 1 cup shredded pepper jack cheese (or mexican blend)
  • 4 - 8-inch whole wheat tortillas
  • 4 tablespoons sour cream, divided
  • 4 tablespoons salsa, divided (optional)

How To Make sunrise burrito

  • Step 1
    Cook sausage, onions and peppers in medium nonstick skillet on medium heat 4 to 5 min. or until sausage is done and vegetables are crisp-tender. Remove from skillet.
  • Step 2
    Add eggs to skillet; cook and stir 2 min. or until set. Return sausage mixture to skillet; stir. Top with cheese.
  • Step 3
    Spoon onto tortillas and top with each with a tablespoon of sour cream and 1 tablespoon salsa (if using); fold in opposite sides of each tortilla, then roll up burrito-style.
