Ingredients

links breakfast sausage (pork or turkey), cut into 1/2-inch pieces
1/2 medium
red onion, sliced
1/2 c
red bell pepper strips
1/2 c
green pepper strips
1 large
jalapeno pepper, seeded and diced (optional)

eggs, beaten
1 c
shredded pepper jack cheese (or mexican blend)

8-inch whole wheat tortillas
4 Tbsp
sour cream, divided
4 Tbsp
salsa, divided (optional)

How to Make Sunrise Burrito

Step-by-Step

  • 1Cook sausage, onions and peppers in medium nonstick skillet on medium heat 4 to 5 min. or until sausage is done and vegetables are crisp-tender. Remove from skillet.
  • 2Add eggs to skillet; cook and stir 2 min. or until set. Return sausage mixture to skillet; stir. Top with cheese.
  • 3Spoon onto tortillas and top with each with a tablespoon of sour cream and 1 tablespoon salsa (if using); fold in opposite sides of each tortilla, then roll up burrito-style.
