Oatmeal is a healthy breakfast that is easily bumped up a notch by added fruit. I like to eat a banana every day b/c of the potassium. Since strawberries and bananas go well together, I made this combination. While any kind of oatmeal can be used, I love the texture of steel-cut whole oats. Cook time will be less if you use rolled oats instead. Hope you enjoy this as much as we did!

Ingredients For strawberry-banana steel-cut oatmeal

  • 2 c
    water
  • 1/2 c
    steel cut oats
  • 1 md
    banana
  • 1/2 c
    strawberry compote
  • 1/2 and 1/2
  • sugar, any kind, for optional topping

How To Make strawberry-banana steel-cut oatmeal

    Cook oats according to package directions. (I like steel-cut oats, which take a lot longer than either rolled or quick oats - your choice!)

    When oats are almost done, slice banana evenly between 2 bowls. Add 1/2 of the cooked oats to each bowl.

    Top oats with 1/4 cup strawberry compote (see note), a splash of 1/2 and 1/2 and a sprinkle of sugar, if desired.

    NOTE: I used home-made Slow-Cooker Strawberry Rhubarb Sauce. Any type of fruit sauce or compote could be used.
