st. patrick's salad
This recipe was personally prepared by Chris Aldfinger for the Brunch meeting with the Curious Cuisiners at the October 2015 meet. "I was given this recipe at least 45 years ago and it has been a favorite with our family since then. Using sugar-free, and lite or low fat ingredients makes this a healthy choice. This is also a great summer salad served on a bed of lettuce."

Ingredients
- 1 small box lime gelatin
- 1 small box lemon gelatin
- 2 cups boiling water
- 1 cup pineapple juice
- 2-3 dashes (drops) green food coloring
- 1 cup crushed pineapple, drained
- 1 cup evaporated milk
- 1 cup mayonnaise
- 1 pound cottage cheese
- 1/2 cup chopped walnuts (optional)
How To Make st. patrick's salad

Step 1Dissolve gelatins in boiling water. Add juice and green food coloring (if desired). Chill until mixture begins to thicken.

Step 2Fold in remaining ingredients and chill overnight until fully set.
