sausage pancakes and apples
This recipe is from friend who got it from the internet and says that you can't have these pancakes without the Special sauce to top them. (Don't tell her but I have tweaked both these recipes to my family's liking!) lol.

Ingredients
- 1 pound pork sausage (i use jimmy dean's)
- 2 large eggs
- 1 1/3 cups milk
- 1/4 cup vegetable oil
- 2 cups bisquick baking mix
- 1 teaspoon ground cinnamon
- 1 pinch nutmeg
- 2 tablespoons granulated sugar
- 1 cup shredded peeled apples
- APPLE CIDER SAUCE:
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, lightly packed
- 1 teaspoon pumpkin pie spice
- 2 cups fresh apple cider
- 2 tablespoons orange juice, fresh
- 1/4 cup butter
- 2 1/2 tablespoons tapoica
- 2 teaspoons orange zest
How To Make sausage pancakes and apples

Step 1Pancakes: Cook and scramble sausage until no longer pink over medium heat, drain grease and pat sausage with paper towels to get most of the grease remaining out and set aside. Beat eggs,milk and oil in a large bowl. Stir in Bisquick, cinnamon and the nutmeg, and sugar just until moist. Fold in apple and sausage. Make pancakes in a lightly sprayed hot skillet or griddle; turn when bubbles form on top . Flip and cook until golden brown. --- Apple Cider Sauce: Combine sugars, tapioca and spices in a saucepan. Gradually stir in cider,orange juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat, stir in butter and orange zest and stir until butter is melted. Serve warm over the pancakes. This is so delicious!!
