Ingredients
- 1 - english muffin, toasted
- 2 large eggs, scrambled
- 1/2 - avocado
- 2 slices tomato
- 3 ounces salmon lox
- 1 tablespoon mayonnaise
- - salt and pepper
How To Make rise n' shine breakfast sandwich

Step 1Once muffin is toasted, spread mayo on one side, and spread/mash the avocado on the other side.

Step 2Lay lox pieces atop the avocado. Top that with the tomato slices.

Step 3Heat a small skillet over medium heat. Spray with olive oil or cooking oil. Crack eggs into pan, and gently agitate the egg to slightly blend the yolk and white together. Add salt and pepper to taste. While cooking, try to keep the egg in a circular, solid form.

Step 4Once cooked, remove egg in one piece and place on mayo side of muffin, gently close the sandwich, and enjoy!
