Really good. You can use leftover popcorn.

Ingredients

  • 2 cups bisquick baking mix
  • 2 - eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 4 cups lightly buttered and salted popped popcorn
  • - maple syrup, butter, and additional popcorn

How To Make popcorn pancakes

  • Step 1
    In a large bowl, whisk together bisquick, milk, eggs and vanilla until smooth. Stir in popcorn. Spray a large skillet with non-stick cooking spray, and heat over medium high heat. Spoon 1/4 cup batter into skillet, and cook for 2-3 minutes or until top of pancake is covered with bubbles, and edges are dry. Flip and cook 2-3 minutes more or until cooked through. Repeat. Serve with maple syrup, butter and popcorn. Makes 3-4 servings.
