yield
25 - 30 balls
Ingredients
- 1/2 cup peanut butter, creamy
- 1/3 cup honey
- 1 teaspoon vanilla
- 1 cup quick cooking oatmeal
- 1/4 cup ground flaxseed
- 1/4 cup wheat bran
- 2/3 cup toasted coconut (sweetened)
- 1/4 cup chopped nuts
- 3 tablespoons mini chocolate chips
- 3 tablespoons chopped dried fruit - raisins, cranberries, cherries, etc.
- 2/3 cup unsweetened coconut, toasted, for rolling the balls
- NOTE: easy substitutions if you are working around food allergies, e.g., almond butter instead of peanut butter, oat bran instead of wheat bran, wheat germ instead of flaxseed, etc.
How To Make peanut butter breakfast balls
-
Step 1Beat together the peanut butter, honey and vanilla.
-
Step 2Combine the remaining ingredients, except the unsweetened coconut. Mix well and beat into the creamed mixture until well-blended.
-
Step 3Roll into one-inch balls and then roll in the unsweetened coconut. (This is more fine than the sweetened coconut inside the balls.)
-
Step 4Allow to air dry for a little while and then store in a plastic container in the refrigerator.
