peanut butter breakfast balls

It's a relatively healthy snack for breakfast or anytime, but the peanut butter and chocolate are still the best part!

Ingredients For peanut butter breakfast balls

  • 1/2 c
    peanut butter, creamy
  • 1/3 c
    honey
  • 1 tsp
    vanilla
  • 1 c
    quick cooking oatmeal
  • 1/4 c
    ground flaxseed
  • 1/4 c
    wheat bran
  • 2/3 c
    toasted coconut (sweetened)
  • 1/4 c
    chopped nuts
  • 3 Tbsp
    mini chocolate chips
  • 3 Tbsp
    chopped dried fruit - raisins, cranberries, cherries, etc.
  • 2/3 c
    unsweetened coconut, toasted, for rolling the balls
  • NOTE:
    easy substitutions if you are working around food allergies, e.g., almond butter instead of peanut butter, oat bran instead of wheat bran, wheat germ instead of flaxseed, etc.

How To Make peanut butter breakfast balls

  • 1
    Beat together the peanut butter, honey and vanilla.

    Combine the remaining ingredients, except the unsweetened coconut. Mix well and beat into the creamed mixture until well-blended.

    Roll into one-inch balls and then roll in the unsweetened coconut. (This is more fine than the sweetened coconut inside the balls.)

    Allow to air dry for a little while and then store in a plastic container in the refrigerator.
