I bought some beautiful French pastries and spiral almond croissants at the market. Then promptly forgot about them. What to do with the dried out pastries? I made myself French toast and froze the rest for later. The dry pastry worked beautifully in this recipe. I served it with homemade orange syrup. (The syrup only took 30 minutes to prepare and make.) I hope you enjoy it! Note: Sitting time is not included in cooking time. You can make this the night before and let it sit in the fridge overnight, or allow the French toast to rest in the fridge for at least 2 - 2 1/2 hours before baking.

Ingredients

  • 1 large French pastry, almond crossiant, chopped up
  • 2 large eggs
  • 1 large orange, juiced (cara cara)
  • 1/4 cup half and half cream
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt, fine
  • 1/4 - 1/2 teaspoon cinnamon
  • ORANGE SYRUP
  • 2 large oranges - cara cara, zest one, juice both
  • 1 cup water
  • 1 cup granulated sugar

How To Make orange french toast for one

  • Step 1
    Butter a small casserole dish and set aside until required. Coarsely chop the almond pastry and set aside.
  • Step 2
    In a small bowl add all the ingredients. Mix well. Then add the chopped pastry and mix lightly. Pour into the prepared dish and place in the fridge to set.

    When ready to serve preheat oven to 350 degrees and bake for 30 - 40 minutes. Please start watching in last 10 minutes of cooking. It should puff up beautifully. If browning too quickly, cover with a piece of tin foil. It will turn a dark golden brown when baked. Serve with fresh homemade orange syrup or maple syrup and whipped cream if desired.

    Quick and Easy Orange Syrup: Zest one of the oranges and set aside until needed.

    Now juice both of the oranges, removing any seeds.
  • Step 6
    In a small pot add the orange zest, orange juice, water, and sugar. Bring to a gentle boil then lower the heat and simmer for 20 - 25 minutes to reduce and thicken the syrup.
  • Step 7
    Pour into a clean bottle, cool and use when ready. The syrup will last in the fridge for about two weeks. It never lasts that long here. I love orange syrup and use it in all kinds of things.
