pumpkin apple muffins-bakin time

Using a recipe from one of my many cookbooks, I baked something this morning that I enjoy for breakfast. Today I will make something that is a favorite with my husband, he prefers basic things like: meatloaf, beef or chicken potpie, stew, roast turkey, or a frozen meal from one of those "named brand" producers. I love casseroles, soups, salads, and comfort foods with rice, pasta, or mixed steamed or roasted vegetables. This recipe will have a picture added whenever I try a new recipe.

Ingredients

  • FRUIT AND NUTS:
  • 3/4 cup pumpkin, canned or cooked
  • 1 medium apple, peeled/chopped
  • 1/2 cup walnuts, chopped
  • WET INGREDIENTS:
  • 1 large egg
  • 6 tablespoons butter, room temperature
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • DRY INGREDIENTS:
  • 2 cups a/p flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • STREUSEL
  • a pinch salt
  • 1/4 teaspoon cinnamon
  • a pinch freshly grated nutmeg
  • 1 or 2 tablespoons butter, cut up into bits
  • 1/3 cup a/p flour
  • 1 or 2 tablespoons light brown sugar

How To Make pumpkin apple muffins-bakin time

  • Step 1
    Preheat oven to 350 degrees, grease muffin pan (12 muffins). Combine dry ingredients. Cream butter with sugar and add egg, vanilla and mix with dry ingredients; add fruit and stir until all are mixed.
  • Step 2
    Bake and cool briefly, enjoy with hot coffee!
