oat free granola

I love granola by the bowl and mixed into my yogurt. I used to make it with oats until I realized I needed to cut oats from my diet. I played with my recipe until I came up with this one. Even my toddler grandson likes this mixture! If you don't care for the peanut butter taste, delete the peanut butter and add 1/4 cup brown sugar. You can also choose what type nut you put in or none at all! If you delete the nuts, be sure to add other fruit or more cereal to make up the volume.

Ingredients For oat free granola

  • 1/4 c
    coconut oil
  • 1/4 c
    peanut butter, creamy
  • 1/4 c
    honey
  • 2 Tbsp
    brown sugar
  • 1 Tbsp
    vanilla
  • 1 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1 c
    sliced almonds, lightly toasted
  • 6 c
    rice cereal (such as rice krispies)

How To Make oat free granola

    In large saucepan, combine coconut oil, peanut butter, honey, brown sugar, and vanilla.

    Warm on low just until it melts enough to be combined smoothly.

    Stir in cinnamon and salt.

    Add rice cereal and almonds, mixing until evenly coated.

    Spread in bottom section of a large roasting pan. (I like a pan with sides so I don't spill when I stir)

    Bake at 225 degrees until golden brown and dry. Stir about every 10-15 minutes to prevent scorching and dry evenly. This takes between 45-60 minutes. Be careful not to overcook.

    Let cool and store in an air tight container.
