norma's pumpkin pancakes

Don't remember when I made these the last time. Found it in my recipe box and thought this is a great time of the year to serve these again to my sweetie Woody. I remember how easy they are to make and how good they are on a cold morning.

Ingredients

  • 2 cups of your favorite complete pancake mix
  • 1 1/2 cups water
  • 2/3 cup 100% pure canned pumpkin (i use libby's)
  • - nonstick cooking spray
  • - pancake syrup, if desired (i used pure maple)
  • - butter if desired
  • - slivered pecans (optional)

How To Make norma's pumpkin pancakes

  • Step 1
    Combine pancake mix, water and pumpkin in a medium bowl and stir until moistened. Batter will be lumpy.
  • Step 2
    Hear your griddle or large skillet over medium heat and spray with nonstick cooking spray.
  • Step 3
    Pour 1/4 cup of batter onto the griddle or pan and cook until batter bubbles begin to burst.
  • Step 4
    Turn over and continue cookig for 1 to 2 minutes or until golden brown.
  • Step 5
    Repeat with remaining batter.
  • Step 6
    Serve hot with your favorite buter and syrup.
