My Great Grandmother Sullivan made these for my grandfather Frank "Barney" Sullivan who asked his mother for the recipe to give to his bride Mabel Kennedy Sullivan. Mabel made sure to give the recipe to my mother Patricia Sullivan, and my mother gave the recipe to me... These hearty pancakes will make you smile.... Coming from a big family, we ate a lot of pancakes, for any meal of the day, and this one is a family favorite! My grandchildren love them... we all do! You can also make them smaller.... have fun and enjoy! Play With Your Food! ox

Ingredients

  • 2 cups old fashioned or quick oats, uncooked
  • 1 1/4 cups flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 3 - eggs, beaten
  • 2 cups milk
  • 1/2 cup butter, melted
  • - syrup, canned pie filling, strawberry preserves or grape jelly, heated

How To Make lumberjack pancakes

  • Step 1
    Combine dry ingredients.
  • Step 2
    Add eggs, milk and butter; mix well, can have some lumps. Leave sit about 10 minutes before using.
  • Step 3
    For each pancakes, pour 1/3 to 1/2 cup batter into hot, greased griddle.
  • Step 4
    Cook over medium heat until bubbles form on surface.
  • Step 5
    Turn; brown on other side. Put on plate with butter and favorite syrup. Can top with pie filling or spread with jam or jelly. *** We ate a lot of pancakes as kids, so we changed the toppings often, which made them seem like a different meal each time. My mother "spoiled" us.... hope you "spoil" your family too!
