My husband likes granola in the morning. I found this recipe and adapted it to suit his needs.

Ingredients
- 1 cup dates, chopped
- 1 cup water
- 8 cups rolled oats
- 1/2 cup sunflower seeds
- 2 cups coconut
- 1 cup chopped pecans
- 1 cup sliced almonds
- 1/2 cup oil
- 1/2 cup apple juice concentrate
- 1 teaspoon vanilla
- - raisins and/or craisins
How To Make low sugar granola

Step 1Cook the dates and water in a saucepan until thick, stirring so it does not stick to the bottom of pan. When thick, remove from heat to cool. Add the oil, apple juice concentrate and vanilla. Meanwhile, combine the oats, seeds, coconut, pecans and almonds in a large bowl. Spread on cookie sheets and bake @ 325 degrees for 20 minutes, stirring occasionally until lightly toasted. I usually change the location of the pans in the oven when I take them out to stir. Put the oat mixture back into the large bowl and add the date mixture and stir well. Put back on cookie sheets and bake for 20 - 30 minutes. Stir occasionally. When toasted to your liking, remove from oven and add craisins and/or raisins. Store in zip lock bags. You can vary the kinds of nuts you use and also the dried fruits. You can also add wheat germ if desired. I add the fruit after the final baking so they stay soft.
