I am so overjoyed when I make these, because I know they LOVE THEM THAT MUCH. The recipe is also in my cookbook, and has been tested by family, & neighbors alike for many years. My one neighbor Bob calls me I HOP on the Block since I have shared them many times.

Ingredients

1/4 ccanola oil

3 largeegg whites( room temperature) beaten stiff

3 largeegg yolks

1 1/2 call purpose flour

1/2 tspbaking soda

1/4 tspsalt

- SPECIAL NOTES: If you are out of buttermilk, you can easily make your own substitute by adding 1 tablespoon distilled white vinegar to a 1 cup measure then fill remainder with milk, stir & let sit for 5 minutes before using.
I always need to double this recipe for my family and you may want to also. Having eggs at room temperature creates more volumn in the recipe.I have been making this recipe for almost 20 years.
