lemon waffles

These waffles are so good. They are full of citrus flavor and great served with blueberries or other fruit too. I hope you like them.

Ingredients

  • 3 cups all purpose flour
  • 3/4 cup granulated sugar
  • 4 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs, lightly beaten with whisk or fork
  • 2 cups dairy buttermilk
  • 2 teaspoons pure vanilla extract
  • 1/4 cup fresh lemon juice
  • zest - of one lemon
  • 3/4 cup butter, melted, and cooled to room temperature
  • 2 cups lemon or vanilla yogurt

How To Make lemon waffles

  • Step 1
    Combine flour, sugar, baking soda, baking powder and salt in a large mixing bowl and whisk to combine. Add the beaten eggs, buttermilk and vanilla; whisk until blended. Stir in lemon juice and zest. Fold in melted butter and then the yogurt. Let batter rest 5 minutes before using.
  • Step 2
    Preheat your waffle iron to desired setting. Pour 2 cups of batter onto the center of the back of the waffle maker; spread batter evenly using a heat-proof spatula. Close lid. When tone sounds, your waffles are ready. Carefully remove you delicious breakfast or brunch waffles. Repeat with remaining batter. Serve while crisp and hot. Add a little lemon juice and grated ginger to your Maple syrup and serve with these wonderful waffles.
  • Step 3
    Any waffles left.. Let cool. place between squares of waxed paper and place 2 to a zip-loc freezer bag and store in freezer for up to 3 months. I doubt they will last that long. Enjoy.
