keto french toast with blueberry syrup
Aldi has the best NO CARB bread! 0 carbs, no lie. The reason? There is just as much fiber as there are carbs. This is one of my favorite breakfasts that I can't give up, and I'm so glad Aldi helped me make keto/low carb easier.

Ingredients
- FRENCH TOAST
- 2 slices aldi no-carb wheat bread
- 2 eggs, beaten
- 1 tablespoon butter
- BLUEBERRY SYRUP
- 2 cups fresh blueberries
- 1/4 cup stevia or other non-sugar sweetener
- 1/4 cup water
How To Make keto french toast with blueberry syrup

Step 1Make syrup the day before and refrigerate. It makes a lot, and you can store it in a jar or container in the fridge to use as a topping for anything.

Step 2To make blueberry syrup, in a medium saucepan over medium high heat, bring to a boil, then turn to medium and stir and cook until blueberries get soft and then turn heat down to low and cook, uncovered, stirring occasionally until thickened. If you would like, add about 1/4 teaspoon cornstarch since it won't add but 2 carbs for the entire recipe. Cook about 10-15 minutes. Allow to cool and place in a jar or container in the refrigerate.

Step 3To make french toast, dip each piece of bread in beaten egg, then place in nonstick pan with butter, cooking on each side over medium high heat and removing to a plate when done. Serve with about 1/4 cup blueberry syrup
