This particular dish is very tasty and looks nice too. The turmeric makes it that bright yellow shade!

Ingredients For jo's tofu scramble

  • 1 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 1 sm
    onion, chopped or 2 green onions chopped
  • 1 sm
    clove garlic, minced
  • 1-2 tsp
    fresh sage leaves, fine chop
  • 6 sm
    white button mushrooms, sliced thin
  • 1 pkg
    fresh firm organic tofu
  • 1/4 Tbsp
    turmeric, ground
  • 1 lg
    tablespoon light miso
  • fresh ground pepper and sea salt to taste

How To Make jo's tofu scramble

    In a large skillet heat the butter and the olive oil.

    Saute the onion, garlic, sage and mushrooms in the butter/olive oil mixture until tender, do not brown.

    Put the package of tofu into the skillet with the cooked veggies and mash with a fork. Saute for a few minutes.

    Sprinkle in the turmeric and add the miso, salt and pepper.Mix well to get the turmeric spread through the tofu to turn it yellow.
