Jo's Tofu Scramble

olive oil
1 small
onion, chopped or 2 green onions chopped
1 small
clove garlic, minced
1-2 tsp
fresh sage leaves, fine chop
6 small
white button mushrooms, sliced thin
1 pkg
fresh firm organic tofu
1/4 Tbsp
turmeric, ground
1 large
tablespoon light miso
fresh ground pepper and sea salt to taste

How to Make Jo's Tofu Scramble


  • 1In a large skillet heat the butter and the olive oil.
  • 2Saute the onion, garlic, sage and mushrooms in the butter/olive oil mixture until tender, do not brown.
  • 3Put the package of tofu into the skillet with the cooked veggies and mash with a fork. Saute for a few minutes.
  • 4Sprinkle in the turmeric and add the miso, salt and pepper.Mix well to get the turmeric spread through the tofu to turn it yellow.
  • 5Serve warm.
  • 6Enjoy!
