jo's tofu scramble

This particular dish is very tasty and looks nice too. The turmeric makes it that bright yellow shade!

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small onion, chopped or 2 green onions chopped
  • 1 small clove garlic, minced
  • 1-2 teaspoon fresh sage leaves, fine chop
  • 6 small white button mushrooms, sliced thin
  • 1 package fresh firm organic tofu
  • 1/4 tablespoon turmeric, ground
  • 1 large tablespoon light miso
  • - fresh ground pepper and sea salt to taste

How To Make jo's tofu scramble

  • Step 1
    In a large skillet heat the butter and the olive oil.
  • Step 2
    Saute the onion, garlic, sage and mushrooms in the butter/olive oil mixture until tender, do not brown.
  • Step 3
    Put the package of tofu into the skillet with the cooked veggies and mash with a fork. Saute for a few minutes.
  • Step 4
    Sprinkle in the turmeric and add the miso, salt and pepper.Mix well to get the turmeric spread through the tofu to turn it yellow.
  • Step 5
    Serve warm.
