  • 1/2 c
    steel-cut oats
  • 1/4 c
    unsweetened vanilla almond milk
  • 1/2 c
    pumpkin, canned or cooked
  • 2 Tbsp
    ground flax meal
  • 2 Tbsp
    toasted wheat bran
  • 1 tsp
    ground cinnamon
  • 1/4 tsp
    ground ginger
  • 1/4 tsp
    ground nutmeg
  • 1 Tbsp
    dark molasses
  • 1 tsp
    vanilla extract

How to Make Irish Pumpkin Oats


  1. Bring 2 cups water to a boil in a medium-sized saucepan. Add steel-cut oats, cover, and reduce heat to low. Simmer for 20-25 minutes, until all water is absorbed into oats.
  2. Stir in all remaining ingredients except for vanilla, cook for an additional 5 minutes, stirring occasionally.
  3. Remove from heat, stir in vanilla.
