Ingredients

  • 1 cup whole wheat flour
  • 1/3 cup all-purpose flour
  • 3 tablespoons splenda
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1-1/4 cup fat-free milk
  • 3 large eggs, beaten, or egg beaters equivalent
  • 3 tablespoons canola oil
  • 1 cup shredded zucchini, squeezed dry.

How To Make healthy zucchini pancakes

  • Step 1
    In lg bowl, whisk together the flours, Splenda, baking powder and salt. In another bowl, whisk together eggs, milk and oil. Stir in zucchini. Stir zucchini mix into flour mix. Blend until moistened and becomes slightly bubbly. Heat lg skillet over medium heat. Slightly oil pan. Pour 1/4 cup batter into skillet, cook until bubbly. Flip over and continue cooking until lightly browned. Repeat w/ remaining batter.
