healthy belgian waffles (whole wheat, flax, chia)
I used Leah Stacey's recipe for Light N Krispy Belgian Waffles as my inspiration. Just added a few ingredients to contribute to the "healthy" factor. My 9-year old is a HORRIBLE eater, but he loves eating these waffles and doesn't even know how many healthy ingredients I have managed to sneak in there!

Ingredients
- 4 - egg yolks
- 4 cups milk
- 2 cups all purpose flour
- 2 cups whole wheat flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2/3 cup canola oil
- 2 teaspoons real vanilla
- 4 - egg whites stiffly beaten
- 2 tablespoons flax
- 2 tablespoons chia seeds
How To Make healthy belgian waffles (whole wheat, flax, chia)

Step 1Preheat waffle maker.

Step 2Put all ingredients except egg whites in large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth.

Step 3By hand, gently fold in beaten egg whites.

Step 4Spray the waffle maker with cooking spray. Pour 3/4 cup batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes or until your light goes off on your iron. Repeat. Serve hot with your favorite topping.
