healthy belgian waffles (whole wheat, flax, chia)

I used Leah Stacey's recipe for Light N Krispy Belgian Waffles as my inspiration. Just added a few ingredients to contribute to the "healthy" factor. My 9-year old is a HORRIBLE eater, but he loves eating these waffles and doesn't even know how many healthy ingredients I have managed to sneak in there!

Ingredients

  • 4 - egg yolks
  • 4 cups milk
  • 2 cups all purpose flour
  • 2 cups whole wheat flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 2/3 cup canola oil
  • 2 teaspoons real vanilla
  • 4 - egg whites stiffly beaten
  • 2 tablespoons flax
  • 2 tablespoons chia seeds

How To Make healthy belgian waffles (whole wheat, flax, chia)

  • Step 1
    Preheat waffle maker.
  • Step 2
    Put all ingredients except egg whites in large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth.
  • Step 3
    By hand, gently fold in beaten egg whites.
  • Step 4
    Spray the waffle maker with cooking spray. Pour 3/4 cup batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes or until your light goes off on your iron. Repeat. Serve hot with your favorite topping.
