Ingredients

  • 1 teaspoon olive oil
  • 3 - thinly sliced scallions
  • 2 teaspoons minced garlic
  • 1/4 teaspoon dried oregano
  • 1 - 10 oz pkg frozen, chopped spinach, thawed, squeezed dry
  • 1/3 cup crumbled, reduced-fat feta cheese.
  • 1/4 cup snipped fresh dill
  • 2 - whole wheat naan flatbreads
  • 1 cup halved cherry tomatoes.
  • 3/4 cup reduced-fat, shredded mozzarella cheese.

How To Make greek pita pizzas w/ spinach & feta

  • Step 1
    Heat oven to 425. Heat oil in lg skillet over medium heat. Add scallions. Cook, stirring until softened. Stir in garlic and oregano, stir 1 min. Stir in spinach and cook until heated through, 2 min. Remove skillet from heat and stir in feta cheese and dill. Spray a baking sheet w/ cooking spray and place NANN on sheet. Top each NAAN evenly with spinach mix. Sprinkle evenly w/ tomatoes and bake until NAAN are crisp on bottom, about 10 mins. Sprinkle each NAAN evenly w/ mozzarella cheese and bake until cheese begins to soften, 3 mins. Cut each pizza in 1/2.
