I got this recipe from www.chickensintheroad.com a couple of weeks ago...changed it up a bit to fit into my healthy eating plan. High protein, low sugar, and my 2 year old daughter loves them! I usually make extra and freeze them to heat up in the toaster on busy days!

Ingredients

Add to Grocery List

1 3/4 c
water
2 scoop(s)
vanilla protein powder
3 large
eggs
2 Tbsp
canola oil
2 tsp
vanilla
2 c
oatmeal, uncooked - not quick cooking
2 Tbsp
brown sugar
1/2 tsp
salt
1/2 tsp
baking soda
2 tsp
baking powder
1 Tbsp
cinnamon

How to Make Flourless Blender Oatmeal Pancakes

Step-by-Step

  • 1Place oatmeal in the blender and blend on high/pulse until oats have a flour consistency.

    Add remaining ingredients and blend well.
  • 2Cook on hot griddle with melted butter or sprayed with your favorite cooking spray. You can also cook in hot waffle iron...make sure to spray the iron.

    Note: You can substitute the protein powder and water for 1 3/4 cup of buttermilk. If you do not have buttermilk you can mix regular milk with 1 Tablespoon of vinegar.

    The mix will seem thin, but will thicked after it sits for a little bit. No flour is needed!
