flourless blender oatmeal pancakes

I got this recipe from www.chickensintheroad.com a couple of weeks ago...changed it up a bit to fit into my healthy eating plan. High protein, low sugar, and my 2 year old daughter loves them! I usually make extra and freeze them to heat up in the toaster on busy days!

Ingredients
- 1 3/4 cups water
- 2 scoops vanilla protein powder
- 3 large eggs
- 2 tablespoons canola oil
- 2 teaspoons vanilla
- 2 cups oatmeal, uncooked - not quick cooking
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1 tablespoon cinnamon
How To Make flourless blender oatmeal pancakes

Step 1Place oatmeal in the blender and blend on high/pulse until oats have a flour consistency. Add remaining ingredients and blend well.

Step 2Cook on hot griddle with melted butter or sprayed with your favorite cooking spray. You can also cook in hot waffle iron...make sure to spray the iron. Note: You can substitute the protein powder and water for 1 3/4 cup of buttermilk. If you do not have buttermilk you can mix regular milk with 1 Tablespoon of vinegar. The mix will seem thin, but will thicked after it sits for a little bit. No flour is needed! Enjoy!
