My DIL cannot stop eating these. They are very tasty and pretty good for you, too.

Ingredients For energy bar by sallye

  • 2/3 c
    chunky peanut butter
  • 1/3 c
  • 16 oz
    package mini marshmallows***
  • 2-1/2 c
    honey nut cheerios
  • 1-1/2 c
    raisin bran
  • 1/2 c
    mixed dried fruit, chopped
  • 1/2 c
    chocolate chips

How To Make energy bar by sallye

    *If you use smooth peanut butter, add ½ cup chopped peanuts **You may substitute Rice Krispies for raisin bran (if so, add ½ cup raisins) ***You may use my recipe for Sugar Free Marshmallow Cream if you want to cut down on sugar.

    In a double boiler, melt peanut butter, butter and marshmallows until well blended stirring frequently to avoid sticking Be patient, this seems to take forever

    Place all other ingredients in a large bowl and mix together

    When peanut butter mixture is smooth (it will be sticky), pour over other ingredients and quickly mix well

    Pour into greased serving dish 9x13 and cut into squares Allow to cool so they will set up. I'm sure these will last a week or more (although they never seem to last over a couple of days around here).
