This is my lightened version of a recipe I found on a box of mushrooms. I entered it in my Weight Watcher file and found it will only be 4 Smart Points. very quick, and also great for my Vegetarian friends.

  • 3
    quick sprays of coconut oil
  • 8 oz
    sliced white or brown mushrooms
  • 3
    green onions, sliced
  • 2/3 c
    egg substitute like egg beaters
  • 1/2 tsp
    mrs. dash garlic seasoning
  • 1 Tbsp
    parmesan cheese
  • 1/3 c
    diced roasted red peppers
  • 2
    thomas english high protein muffins

How to Make Egg and Mushrooms on Toasted Muffins


  1. Using a nonstick skillet sprayed with coconut oil, saute mushrooms & green onions until mushrooms are lightly browned.
  2. Mix Mrs. Dash into egg substitute; Add to skillet; Cover and cook until top is almost set.
  3. Sprinkle with Parmesan cheese.
  4. Cut eggs into 4 servings. Add to toasted English muffin. Top egg mixture with the diced roasted red pepper; Cover with muffin top & enjoy!
