egg and mushrooms on toasted muffins

This is my lightened version of a recipe I found on a box of mushrooms. I entered it in my Weight Watcher file and found it will only be 4 Smart Points. very quick, and also great for my Vegetarian friends.

Ingredients

  • 3 - quick sprays of coconut oil
  • 8 ounces sliced white or brown mushrooms
  • 3 - green onions, sliced
  • 2/3 cup egg substitute like egg beaters
  • 1/2 teaspoon mrs. dash garlic seasoning
  • 1 tablespoon parmesan cheese
  • 1/3 cup diced roasted red peppers
  • 2 - thomas english high protein muffins

How To Make egg and mushrooms on toasted muffins

  • Step 1
    Using a nonstick skillet sprayed with coconut oil, saute mushrooms & green onions until mushrooms are lightly browned.
  • Step 2
    Mix Mrs. Dash into egg substitute; Add to skillet; Cover and cook until top is almost set.
  • Step 3
    Sprinkle with Parmesan cheese.
  • Step 4
    Cut eggs into 4 servings. Add to toasted English muffin. Top egg mixture with the diced roasted red pepper; Cover with muffin top & enjoy!
