Egg and Mushrooms on Toasted Muffins
3quick sprays of coconut oil
8 ozsliced white or brown mushrooms
3green onions, sliced
2/3 cegg substitute like egg beaters
1/2 tspmrs. dash garlic seasoning
1 Tbspparmesan cheese
1/3 cdiced roasted red peppers

How to Make Egg and Mushrooms on Toasted Muffins
- Using a nonstick skillet sprayed with coconut oil, saute mushrooms & green onions until mushrooms are lightly browned.
- Mix Mrs. Dash into egg substitute; Add to skillet; Cover and cook until top is almost set.
- Sprinkle with Parmesan cheese.
- Cut eggs into 4 servings. Add to toasted English muffin. Top egg mixture with the diced roasted red pepper; Cover with muffin top & enjoy!
