easy banana breakfast cookies
This recipe is a good not overly sweet healthy breakfast or anytime treat. It got a thumbs up from my boys & husband. Nice way to use up ripe bananas, and each cookie (this recipe makes 9 cookies) is 186 calories. You can leave out the sugar & it brings down the calorie count to 143 per cookie.

Ingredients
- 3 overripe bananas, peeled & mashed
- 2 1/4 cups old fashioned oats (do not use quick cooking kind
- 1/4 cup frozen mini chocolate chips
- 1/4 cup crunchy peanut butter
- 1/2 teaspoon vanilla
- 1 pinch kosher salt
- 2 tablespoons sugar
How To Make easy banana breakfast cookies

Step 1Add all ingredients to a large bowl.

Step 2Mix well with a fork making sure all the mixture is well coated.

Step 3Scoop into a well greased baking pan with large scoop into 9 big cookies. Wet your hands and using your palm press the cookies down into a cookie shape.

Step 4Bake in a 350 degree or heated oven for 11-15 minutes or until slightly browned & a little firm and drier on top when touched. Remove from oven and let cool for a few minutes, remove & place on wax paper to cool and harden completely. Store cookies in a covered container in the fridge. Enjoy
