Ingredients
- - cooking spray to grease muffin tin or use muffin tin liners
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons espresso powder
- 1 teaspoon cinnamon
- 3/4 cup sugar
- 1 cup milk
- 1/3 cup canola oil
- 2 teaspoons vanilla extract
- 3/4 cup chopped walnuts
- TOPPING
- 1/4 cup finely chopped walnuts
- 2 tablespoons packed brown sugar
How To Make coffee walnut muffins

Step 1Preheat oven to 350 degrees. Lightly grease muffin tin or place 12 muffin cup liners in a muffin pan.

Step 2Sift together the flour, baking powder, espresso powder, cinnamon in a large bowl and stir in the granulated sugar.

Step 3Whisk together the milk, oil, and vanilla extract in a small bowl. Stir into the dry ingredients, adding the chopped walnuts at the same time. Mix until just combined - do not overmix.

Step 4Divide the batter evenly among the 12 muffin cups. Finely chop the walnuts and mix with the brown sugar. Sprinkle on top of each muffin cup.

Step 5Bake for 20-25 minutes or until a toothpick inserted into the muffin comes out clean. Let cool slightly for 5 minutes before removing them from the pan and serving.
