A great quick breakfast/snack for some good carbs/energy or for a pre-workout 'meal'.

This recipe makes 12 muffins. Nutritional information is as follows:

Ingredients

1 1/4 c
old fashioned oats
1 c
whole wheat flour
2 Tbsp
unsweetened cocoa powder
2 Tbsp
100% whey protein (chocolate, vanilla, or any other)
1 tsp
baking powder
1/2 tsp
baking soda
1
large egg
1 c
unsweetened applesauce
1/2 c
low fat milk + 1/2 tsp white vinegar
3 Tbsp
honey
2 Tbsp
olive oil
1/2 c
raisins

How to Make Chocolate "Muscle" Muffins

Step-by-Step

  • 1Preheat oven to 350 degrees.
  • 2Mix all dry ingredients together.
  • 3In a separate bowl whisk all wet ingredients together.
  • 4Make a well in the dry ingredients and pour the wet ingredient mixture into the well. Mix together until just moistened. Stir in raisins.
  • 5Bake 20 minutes or until toothpick comes out clean.
