  • 1 cup flax seed meal
  • 1/2 cup whey protein
  • 3 tablespoons unsweetened cocoa powder
  • 1/3 cup splenda for baking
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened coconut milk
  • 2 large eggs, lightly beaten
  • 4 tablespoons butter
  • 2 teaspoons vanilla extract

How To Make chocolate flaxseed muffins (low-carb)

  • Step 1
    Preheat oven to 350 F.
  • Step 2
    Mix all ingredients in a bowl and let stand for 2-3 minutes.
  • Step 3
    Spray a 12 muffin pan with non-stick spray. Spoon batter evenly into muffin tins. Bake 25-30 minutes. Let cool and enjoy!
