Well,it was muffin bake day and I had none of my usual ingredients !! Now what??? I had a lone zennie and some coconut flakes and some chocolate chips,so I just started mixing. and this is what the finished muffin turned out to be. "Mama's blend is a brand. that I buy.. it has several flours mixed already in it."

Ingredients For chocolate chip zucchini coconut muffins

  • 1 1/2 c
    gluten free flour mix, "see below for mixture"
  • 1/2 c
    sugar / stevia ..you can buy this together now
  • 1 tsp
    soda + 1 tsp of guar gum "don't forget"
  • 2 tsp
    baking powder
  • 1 lg
    egg
  • 1/2 c
    grape oil (or less)
  • 1/2 c
    rice milk
  • 1 tsp
    fresh lemon juice
  • 1 tsp
    coconut extract
  • 1 c
    shredded zucchini -"most liquid squeezed out"
  • 1 c
    mini choclate chips
  • 3/4 c
    coconut flakes
  • GLUTEN FREE FLOUR MIXTURE...
  • 3/4 c
    mama's coconut flour "blend"
  • 1/4 c
    white rice- or white rice sweet flour
  • 1/4 c
    brown rice flour
  • 1/4 c
    potato starch -not flour there is a difference
  • SECOND "FLOUR BLEND"
  • 2 c
    fine brown rice flour
  • 3/4 c
    potato starch "not flour"
  • 1/4 c
    tapioca starch/flour
  • THIS MAKES 3 CUPS... MAY USE THIS IN THESE MUFFINS. DON'T FORGET THE XGUM...

How To Make chocolate chip zucchini coconut muffins

    mix ALL dry ingredients ,,I sift all my dry except for the coconut..sit aside

    In another bowl,combine the oil,egg,rice milk,lemon juice, coconut extract. ALL liquid ingredients.. mix well...Stir wet ingredients into dry ingredients just until mixed...don't over do it.

    Now you fold in the zennie,and the chocolate chips and the coconut flakes. Now if the mixture is too thick or dry, add some applesauce or a little more rice milk, a small amount till it feels smooth.

    fill your greased or paper lined muffin cups "I only use silicone cups" 2/3 full, I sprinkled a little sugar on top.and baked at 375 for about 20 -25 minutes. check old fashion way with tooth pick ! should be nice and brown on top.
