chocolate chip zucchini coconut muffins
Well,it was muffin bake day and I had none of my usual ingredients !! Now what??? I had a lone zennie and some coconut flakes and some chocolate chips,so I just started mixing. and this is what the finished muffin turned out to be. "Mama's blend is a brand. that I buy.. it has several flours mixed already in it."

Ingredients
- 1 1/2 cups gluten free flour mix, "see below for mixture"
- 1/2 cup sugar / stevia ..you can buy this together now
- 1 teaspoon soda + 1 tsp of guar gum "don't forget"
- 2 teaspoons baking powder
- 1 large egg
- 1/2 cup grape oil (or less)
- 1/2 cup rice milk
- 1 teaspoon fresh lemon juice
- 1 teaspoon coconut extract
- 1 cup shredded zucchini -"most liquid squeezed out"
- 1 cup mini choclate chips
- 3/4 cup coconut flakes
- GLUTEN FREE FLOUR MIXTURE...
- 3/4 cup mama's coconut flour "blend"
- 1/4 cup white rice- or white rice sweet flour
- 1/4 cup brown rice flour
- 1/4 cup potato starch -not flour there is a difference
- SECOND "FLOUR BLEND"
- 2 cups fine brown rice flour
- 3/4 cup potato starch "not flour"
- 1/4 cup tapioca starch/flour
- THIS MAKES 3 CUPS... MAY USE THIS IN THESE MUFFINS. DON'T FORGET THE XGUM...
How To Make chocolate chip zucchini coconut muffins

Step 1mix ALL dry ingredients ,,I sift all my dry except for the coconut..sit aside

Step 2In another bowl,combine the oil,egg,rice milk,lemon juice, coconut extract. ALL liquid ingredients.. mix well...Stir wet ingredients into dry ingredients just until mixed...don't over do it.

Step 3Now you fold in the zennie,and the chocolate chips and the coconut flakes. Now if the mixture is too thick or dry, add some applesauce or a little more rice milk, a small amount till it feels smooth.

Step 4fill your greased or paper lined muffin cups "I only use silicone cups" 2/3 full, I sprinkled a little sugar on top.and baked at 375 for about 20 -25 minutes. check old fashion way with tooth pick ! should be nice and brown on top.
