Well,it was muffin bake day and I had none of my usual ingredients !! Now what??? I had a lone zennie and some coconut flakes and some chocolate chips,so I just started mixing. and this is what the finished muffin turned out to be. "Mama's blend is a brand. that I buy.. it has several flours mixed already in it."

How To Make chocolate chip zucchini coconut muffins

  • 1
mix ALL dry ingredients ,,I sift all my dry except for the coconut..sit aside
  • 2
In another bowl, combine the oil, egg, rice milk, lemon juice, coconut extract. ALL liquid ingredients.. mix well...Stir wet ingredients into dry ingredients just until mixed...don't over do it.
  • 3
Now you fold in the zennie, and the chocolate chips and the coconut flakes. Now if the mixture is too thick or dry, add some applesauce or a little more rice milk, a small amount till it feels smooth.
  • 4
fill your greased or paper lined muffin cups "I only use silicone cups" 2/3 full, I sprinkled a little sugar on top.and baked at 375 for about 20 -25 minutes. check old fashion way with tooth pick ! should be nice and brown on top.
