This is a gluten free recipe that was modified for a friend. You will NEVER taste the difference. Almond flour adds such a depth of flavor, you will wonder why you haven't used it before. Subtle and moist this crumble is fresh and lively and will surely make you the star of the show! The almond flour can be substituted for All purpose flour without notice. Frozen cherries or canned cherries can be used if drained. Do not use cherry pie filling. I used Bob's Red Mill Almond Flour.

Ingredients

  • 1/2 cup salted butter
  • 1/2 cup sugar
  • 1/4 cup brown sugar, lightly packed
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1-1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup buttermilk
  • 2 cups cherries, fresh or frozen
  • FRESH GINGER LIME CRUMBLE TOPPING
  • 1/4 cup almond flour
  • 1/2 cup sugar
  • 1/3 cup salted butter
  • 1/4 cup hazelnuts, chopped
  • 1 tablespoon lime zest
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon cinnamon

How To Make cherry lime coffee cake crumble

  • Step 1
    Preheat oven to 350 degree. Using a springform pan, spray pan with baking spray and cut parchment paper to line bottom of pan and spray again.
  • Step 2
    Beat butter and sugars until fluffy. Scrap the sides and beat in 1 egg at a time. Beat well after each addition. Add vanilla and almond extract.
  • Step 3
    Whisk together almond flour, baking powder and salt. Gradually add flour mixture to butter mixture adding buttermilk alternately ending with flour. Beat until just blended. Pour batter into springform pan leveling batter with spatula. Top with an even layer of cherries and then top with crumble. Bake for 45 minutes or until wooden pick comes out clean. Cool for 20 minutes and remove from springform pan.
  • Step 4
    To make crumble: In a small bowl, stir together all ingredients until mixture is crumbly.
