I was craving pancakes and trying to find a substitute for flour, came up with these. They really have a wonderful taste.

  • 3 large
    eggs
  • 1/2 c
    strained cottage cheese
  • 1 Tbsp
    granulated sugar substitute
  • 1/2 tsp
    cinnamon
  • 1/4 c
    flax meal

How to Make Cathie's Carb Friendly Pancakes

Step-by-Step

  1. STRAIN COTTAGE CHEESE IN DOUBLE LAYER OF CHEESE CLOTH UNTIL NO LIQUID IS PRESENT.
  2. WHISK EGGS, SUGAR SUBSTITUTE AND CINNAMON TOGETHER. ADD COTTAGE CHEESE; WHISKING WELL. WHISK IN FLAX MEAL A LITTLE AT A TIME, MIXING WELL.
  3. POUR EVERYTHING IN A BLENDER AND WHIP ON HIGH FOR ABOUT A MINUTE.
