I was craving pancakes and trying to find a substitute for flour, came up with these. They really have a wonderful taste.

Ingredients

3 large
eggs
1/2 c
strained cottage cheese
1 Tbsp
granulated sugar substitute
1/2 tsp
cinnamon
1/4 c
flax meal

Step-By-Step

1STRAIN COTTAGE CHEESE IN DOUBLE LAYER OF CHEESE CLOTH UNTIL NO LIQUID IS PRESENT.
2WHISK EGGS, SUGAR SUBSTITUTE AND CINNAMON TOGETHER. ADD COTTAGE CHEESE; WHISKING WELL. WHISK IN FLAX MEAL A LITTLE AT A TIME, MIXING WELL.
3POUR EVERYTHING IN A BLENDER AND WHIP ON HIGH FOR ABOUT A MINUTE.
