This is a low carb delicious breakfast to get your day started right!!! I'm a diabetic so it is GREAT for me and so darn tasty!!!!

Ingredients

  • 6 slices deli-style turkey
  • 6 - eggs
  • 1/4 cup mozzarella cheese shredded
  • 1/4 cup shredded parmesan cheese
  • 1 - avocado
  • 1/2 cup fresh spinach
  • 1 - tomato, diced
  • - seasonings to taste

How To Make california breakfast cups

  • Step 1
    I didn't measure anything so these are all approximate measures. Make it to suit your tastes!
  • Step 2
    Spray a large muffin tin generously with nonstick spray. Preheat oven to 350.
  • Step 3
    Lay a turkey slice in the bottom and up the sides of each muffin hole. Mix your cheeses together and put a pinch of cheese mixture on top of the turkey. Add a few pieces of spinach, a few pieces of avocado and a few pieces of tomato on top of cheese. Crack your egg on top of everything and then sprinkle with whatever spices you want to use. I used pepper, garlic salt and oregano. Now top it off with the remaining cheese mixture.
  • Step 4
    Bake at 350 until the egg is done and cheese is melted, about 20 minutes.

    ENJOY!!!
