Ingredients
- 6 slices deli-style turkey
- 6 - eggs
- 1/4 cup mozzarella cheese shredded
- 1/4 cup shredded parmesan cheese
- 1 - avocado
- 1/2 cup fresh spinach
- 1 - tomato, diced
- - seasonings to taste

Step 1I didn't measure anything so these are all approximate measures. Make it to suit your tastes!

Step 2Spray a large muffin tin generously with nonstick spray. Preheat oven to 350.

Step 3Lay a turkey slice in the bottom and up the sides of each muffin hole. Mix your cheeses together and put a pinch of cheese mixture on top of the turkey. Add a few pieces of spinach, a few pieces of avocado and a few pieces of tomato on top of cheese. Crack your egg on top of everything and then sprinkle with whatever spices you want to use. I used pepper, garlic salt and oregano. Now top it off with the remaining cheese mixture.

Step 4Bake at 350 until the egg is done and cheese is melted, about 20 minutes.
