This is a low carb delicious breakfast to get your day started right!!! I'm a diabetic so it is GREAT for me and so darn tasty!!!!

Ingredients For california breakfast cups

6 slicedeli-style turkey
-
6eggs
-
1/4 cmozzarella cheese shredded
-
1/4 cshredded parmesan cheese
-
1avocado
-
1/2 cfresh spinach
-
1tomato, diced
-
seasonings to taste
How To Make california breakfast cups

1I didn't measure anything so these are all approximate measures. Make it to suit your tastes!

2Spray a large muffin tin generously with nonstick spray. Preheat oven to 350.

3Lay a turkey slice in the bottom and up the sides of each muffin hole. Mix your cheeses together and put a pinch of cheese mixture on top of the turkey. Add a few pieces of spinach, a few pieces of avocado and a few pieces of tomato on top of cheese. Crack your egg on top of everything and then sprinkle with whatever spices you want to use. I used pepper, garlic salt and oregano. Now top it off with the remaining cheese mixture.

4Bake at 350 until the egg is done and cheese is melted, about 20 minutes.
