buckwheat pancakes
In my endeavor to add a variety of whole grains to my family's diet I ran into this recipe somewhere online I believe. Using applesauce in place of the butter is hardly noticeable to the flavor or texture.

Ingredients
- 2 cups buckwheat flour (i used freshly ground)
- 2 teaspoons baking powder
- 2-4 tablespoons sugar
- 1 teaspoon salt
- 2 large eggs
- 2 cups milk
- 1/4 cup melted butter or applesauce
