This is a unique, delicious breakfast surprise that is sure to please anyone who loves roasted Brussels spouts. Your palate will be pleasantly surprised. My brother loves this with a slice of buttered sourdough toast. I like that yolk runny....it just adds an extra special yumminess when added to the roasted Brussels sprouts.

Ingredients
- 4 slices bacon
- 1/3 cup onion, diced
- 12 ounces brussel sprouts halved
- 1 teaspoon salt
- 1 pinch red pepper flakes
- 1/8 teaspoon garlic, minced
- 4 eggs
How To Make brussel sprouts hash

Step 1Fry bacon to crisp. Remove to paper towels. Take out all but 1 TBSP of bacon grease. Add in onions and brussel sprouts, salt, pepper, red pepper flakes. Cook 5 minutes.

Step 2Add in garlic. Cook 3-5 more minutes. Add 2 TBSP of water and cover with a lid. Lower the heat and cook 5 more minutes.

Step 3Make 4 "wells" in the brussels sprouts and add an egg to each "nest". Add 2 TBSP of water, cover with a lid and cook to desired consistency. I like a runny yolk with the whites done. Sprinkle crispy bacon over the top and serve.
