Ingredients
- 4 slices crusty bread (country, french, etc.)
- 4 slices (thick cut or slab) bacon (pancetta, proscuitto or similar will work as well)
- 1/2 cup ricotta cheese
- 1/4-1/2 - cantaloupe, peeled and seeded
- - fresh mint leaves
- - flaky salt, to taste (fleur de sel, pyramid, smoked salt-experiment!)
- - *good quality* honey, for drizzling
How To Make breakfast tartines

Step 1Toast the bread slices.

Step 2Cook the bacon until crisp, drain on paper towels and crumble into pieces.

Step 3Spread each toast slice with 1/4 of the ricotta cheese. Slice cantaloupe thinly with a sharp knife, vegetable peeler or mandoline and arrange over the toast slices.

Step 4Garnish each toast slice crumbled bacon, fresh mint and salt; drizzle with honey.
