  • 1 lb
    sweet potatoes,peeled and cut into 1/2" cubes
  • 1/2 c
    green bell pepper
  • 3/4 c
    chopped sweet onion
  • 1 1/2 tsp
    freshly minced garlic
  • 1 1/2 tsp
    extra-virgin olive oil
  • 1/4 tsp
  • 1/8 tsp
    salt,plus more to taste
  • ·
    ground black pepper to taste
  • ·
    ground red pepper to taste

How to Make Breakfast (Sweet) Potatoes


  1. Preheat the oven to 400.
    Line a large baking sheet with parchment paper.
  2. In a medium glass or plastic mixing bowl,combine the 1st 7 ingredients and toss well to combine.
    Transfer to the prepared baking sheet and arrange in a single layer.
  3. Bake for 20 minutes.
    Turn the potatoes pieces with a spatula and bake 20-25 minutes longer,or until the potatoes are tender and the onion and pepper are lightly browned.
    Season with the additional salt and pepper and red pepper.
    Serve immediately.
