Ingredients

  • 1 pound sweet potatoes,peeled and cut into 1/2" cubes
  • 1/2 cup green bell pepper
  • 3/4 cup chopped sweet onion
  • 1 1/2 teaspoons freshly minced garlic
  • 1 1/2 teaspoons extra-virgin olive oil
  • 1/4 teaspoon paprika
  • 1/8 teaspoon salt,plus more to taste
  • - ground black pepper to taste
  • - ground red pepper to taste

How To Make breakfast (sweet) potatoes

  • Step 1
    Preheat the oven to 400. Line a large baking sheet with parchment paper.
  • Step 2
    In a medium glass or plastic mixing bowl,combine the 1st 7 ingredients and toss well to combine. Transfer to the prepared baking sheet and arrange in a single layer.
  • Step 3
    Bake for 20 minutes. Turn the potatoes pieces with a spatula and bake 20-25 minutes longer,or until the potatoes are tender and the onion and pepper are lightly browned. Season with the additional salt and pepper and red pepper. Serve immediately.
