breakfast rolls (aka cinnamon rolls)

I obtained this recipe from a lady I sold life insurance to years ago and have been using it ever since! It is kinda cheating using the yellow cake mix but the results are much the same and it has very little kneading! I think that it is great to be able to put in refridgerator overnight and freshly baked in the morning in time for breakfast! I hope you all enjoy it!

Ingredients For breakfast rolls (aka cinnamon rolls)

  • 1 box
    yellow cake mix
  • 1 tsp
    salt (optional)
  • 2 pkg
    active dry yeast
  • 2 1/2 c
    warm water
  • 5 c
    all purpose flour
  • butter softened
  • sugar (about 1/2 cup)
  • cinnamon (about 3 or 4 tbs) or to taste. i use a lot of cinnamon.
  • 1/2 c
    chopped walnuts or pecans

How To Make breakfast rolls (aka cinnamon rolls)

    Mix together yellow cake mix, salt, 2 pkgs. active dry yeast.

    Add 2 1/2 cups of warm water. Mix well.

    Then add flour. Mix well till ball forms.

    Let sit for one hour. Then turn out on floured surface and add 1/2 to 1 cup more flour till smooth.

    Roll out dough into one large rectangle, about 1/4 - 1/2 inch thick.

    Spread softened butter over dough. Then sprinkle with sugar and cinnamon. You can also add chopped walnuts or pecans if desired.

    Roll up. Cut with thread, I use sewing thread. If you use a knife the dough will not rise correctly. I cut about 1 1/2 - 2 inches wide.

    Place on greased pans, cut side up. I usually use disposible pans since I give most of them away!

    If you use 8x8 in pans, I put 4 (four) rolls in each pan. I also use the smaller space in the middle for a smaller roll.

    Let rise another 2 hours or cover and refridgerate over night.

    Bake in preheated 350 degree oven for 15 - 20 minutes.
