Found this recipe while at my 3 year old's doctors office. Can't wait to make them so she can try them. She loves sweets so maybe something so healthy yet sweet for breakfast will work. Will let you know!

Ingredients

  • 1 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup canola oil
  • 1/4 cup sugar
  • 1/2 cup brown sugar, firmly packed
  • 1 - egg
  • 1 cup rolled oats
  • 1 cup finely shredded carrots (about 2 carrots)
  • 1/2 cup raisins
  • 6 ounces reduced-fat cream cheese, softened
  • 2 tablespoons maple syrup

How To Make breakfast oatmeal sandwich cookie

  • Step 1
    Preheat Oven 350*.
  • Step 2
    Line 2 cookie sheets with parchment paper.
  • Step 3
    In bowl mix flour, baking powder, baking soda, pumpkin pie spice, and salt.
  • Step 4
    In separate large bowl mix oil, both sugars and egg.
  • Step 5
    Once mixed add flour mixture, shredded carrots and raisins.
  • Step 6
    Set out by Tablespoons on cookie sheet.Be sure there are an equal amount.
  • Step 7
    Bake for 10-12 minutes.
  • Step 8
    Put cookies to side on wrack to cool.
  • Step 9
    Filling can be made while cookies are baking: Mix 6oz of cream cheese and maple syrup together.
  • Step 10
    Put filling on half of cooled cookies.
  • Step 11
    Then place other half of cookies on top to make sandwiches.
  • Step 12
    Wrap in waxed paper,saran wrap or small sandwich bags and chill for 3 days before eating.
