This recipe lends itself to many variations, so you can tailor it to your tastes. Quite often, recipes that are lower in fat are higher in sugar and vice versa, but this has a pretty good balance,

Ingredients For breakfast cookies

  • BATTER
  • 1/4 c
    all-purpose flour
  • 1/4 c
    whole wheat flour
  • 1/4 c
    oat flour
  • 1/4 c
    nut flour - almond or walnut
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 2 Tbsp
    ground flaxseed
  • 1 tsp
    cinnamon
  • 3 Tbsp
    olive, canola or coconut oil
  • 3 Tbsp
    unsweetened applesauce*
  • 1 1/2 Tbsp
    egg substitute
  • 2 Tbsp
    sugar
  • 2 Tbsp
    brown sugar
  • 1 tsp
    vanilla
  • *
    can also use mashed banana or a fruit flavored baby food
  • MIX-IN'S
  • 1/4 c
    quick oats, oat bran or wheat bran
  • 1/4 c
    chopped walnuts or other nuts
  • 1/4 c
    raisins, dried cranberries or other dried fruit

How To Make breakfast cookies

  • 1
    Mix the dry ingredients in a bowl.
  • 2
    Stir together the oil, applesauce, sugars, egg substitute and vanilla. (Can use a mixer or stir by hand.) Mix in the dry ingredients.

    Stir in whatever you want to use as mix-in's. If using raisins, soak in boiling water for a few minutes and drain.

    Drop by teaspoons onto a sprayed baking sheet. Bake at 350° for 10 - 12 minutes.
