Ingredients
- BATTER
- 1/4 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1/4 cup oat flour
- 1/4 cup nut flour - almond or walnut
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 tablespoons ground flaxseed
- 1 teaspoon cinnamon
- 3 tablespoons olive, canola or coconut oil
- 3 tablespoons unsweetened applesauce*
- 1 1/2 tablespoons egg substitute
- 2 tablespoons sugar
- 2 tablespoons brown sugar
- 1 teaspoon vanilla
- * can also use mashed banana or a fruit flavored baby food
- MIX-IN'S
- 1/4 cup quick oats, oat bran or wheat bran
- 1/4 cup chopped walnuts or other nuts
- 1/4 cup raisins, dried cranberries or other dried fruit
How To Make breakfast cookies

Step 1Mix the dry ingredients in a bowl.

Step 2Stir together the oil, applesauce, sugars, egg substitute and vanilla. (Can use a mixer or stir by hand.) Mix in the dry ingredients.

Step 3Stir in whatever you want to use as mix-in's. If using raisins, soak in boiling water for a few minutes and drain.

Step 4Drop by teaspoons onto a sprayed baking sheet. Bake at 350° for 10 - 12 minutes.
