This recipe lends itself to many variations, so you can tailor it to your tastes. Quite often, recipes that are lower in fat are higher in sugar and vice versa, but this has a pretty good balance,

Ingredients

  • BATTER
  • 1/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/4 cup oat flour
  • 1/4 cup nut flour - almond or walnut
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 2 tablespoons ground flaxseed
  • 1 teaspoon cinnamon
  • 3 tablespoons olive, canola or coconut oil
  • 3 tablespoons unsweetened applesauce*
  • 1 1/2 tablespoons egg substitute
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla
  • * can also use mashed banana or a fruit flavored baby food
  • MIX-IN'S
  • 1/4 cup quick oats, oat bran or wheat bran
  • 1/4 cup chopped walnuts or other nuts
  • 1/4 cup raisins, dried cranberries or other dried fruit

How To Make breakfast cookies

  • Step 1
    Mix the dry ingredients in a bowl.
  • Step 2
    Stir together the oil, applesauce, sugars, egg substitute and vanilla. (Can use a mixer or stir by hand.) Mix in the dry ingredients.
  • Step 3
    Stir in whatever you want to use as mix-in's. If using raisins, soak in boiling water for a few minutes and drain.
  • Step 4
    Drop by teaspoons onto a sprayed baking sheet. Bake at 350° for 10 - 12 minutes.
