I love this recipe as one of my on the go breakfasts for my children.

Ingredients

  • 1/2 c
    applesauce, unsweetened
  • 1/2 c
    butter, melted
  • 1/2 c
    honey
  • 2 large
    eggs
  • 1 tsp
    salt
  • 1 tsp
    cinnamon
  • 1 tsp
    baking soda
  • 1 tsp
    vanilla
  • 1/2 c
    buttermilk
  • 2 c
    whole wheat flour (i used freshly ground)
  • 2 c
    rolled oats
  • 1 c
    raisins, chopped dates or chocolate chips

How to Make Breakfast Cookies

Step-by-Step

  1. Combine applesauce, butter, honey, eggs, salt, cinnamon, baking soda, vanilla & buttermilk.
  2. Stir in oats & flour.
  3. Fold in raisins, dates or chocolate chips.
  4. Using an ice cream scooper, scoop onto greased cookie sheet.
  5. Bake at 350' for 15-20 minutes.
