Cookies for breakfast..you can't beat that. I love this recipe as one of my on the go breakfasts for my children. **These cookies freeze very well.

Ingredients
- 1/2 cup applesauce, unsweetened
- 1/2 cup butter, melted
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 cup buttermilk
- 2 cups whole wheat flour (i used freshly ground)
- 2 cups rolled oats
- 1 cup raisins, chopped dates or chocolate chips
How To Make breakfast cookies

Step 1Combine applesauce, butter, honey, eggs, salt, cinnamon, baking soda, vanilla & buttermilk.

Step 2Stir in oats & flour.

Step 3Fold in raisins, dates or chocolate chips.

Step 4Using an ice cream scooper, scoop onto greased cookie sheet.

Step 5Bake at 350' for 15-20 minutes.
