I found this in a VERY old cook book and gave it a try, Not a real fluffy pancake but very good and very easy to make. This only made 6 medium sized cakes, so you may want to double it.

Ingredients

  • 1 c
    soft bread crumbs
  • 1 c
    buttermilk, or sour milk
  • 1/2 tsp
    baking soda
  • 2 large
    eggs
  • 1-2 Tbsp
    granulated sugar
  • 1/2 c
    all purpose flour
  • 2 tsp
    vanilla extract (optional)

How to Make Breadcrumb griddlecakes

Step-by-Step

  1. Soak the breadcrumbs in the buttermilk for several hours, ( I soaked them overnight in the refrigerator)
  2. Then stir in the rest of the ingredients using enough flour to make a thick batter.
  3. cook as you would regular pancakes. enjoy!!
  4. I used exactly 1/2 cup of flour, and I also used 2 T of sugar and the vanilla was my idea because I love vanilla
