I found this in a VERY old cook book and gave it a try, Not a real fluffy pancake but very good and very easy to make. This only made 6 medium sized cakes, so you may want to double it.

Ingredients

  • 1 cup soft bread crumbs
  • 1 cup buttermilk, or sour milk
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1-2 tablespoon granulated sugar
  • 1/2 cup all purpose flour
  • 2 teaspoons vanilla extract (optional)

How To Make breadcrumb griddlecakes

  • Step 1
    Soak the breadcrumbs in the buttermilk for several hours, ( I soaked them overnight in the refrigerator)
  • Step 2
    Then stir in the rest of the ingredients using enough flour to make a thick batter.
  • Step 3
    cook as you would regular pancakes. enjoy!!
  • Step 4
    I used exactly 1/2 cup of flour, and I also used 2 T of sugar and the vanilla was my idea because I love vanilla
