These are thick and fluffy. They will "stick to your ribs". Try serving them with warmed applesauce instead of syrup.

Ingredients

  • 3/4 c
    quick-cooking oats
  • 2/3 c
    whole wheat flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 Tbsp
    sugar
  • 1 medium
    ripe banana
  • 1
    egg
  • 1 1/4 c
    low fat buttermilk
  • 2 Tbsp
    oil

How to Make BANANA OATMEAL PANCAKES

Step-by-Step

  1. Mix together flour, baking powder, baking soda, oats and sugar. Set aside.
  2. In blender whirl banana until smooth. Add egg, buttermilk, and oil; whirl until smooth. Stir banana mixture into dry ingredients, blending well. If batter is too thick, add more buttermilk one tablespoon at a time. Cook on hot griddle sprayed with cooking spray.
  3. Serve with warmed applesauce and cinnamon.
