These are thick and fluffy. They will "stick to your ribs". Try serving them with warmed applesauce instead of syrup.

Ingredients

  • 3/4 cup quick-cooking oats
  • 2/3 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon sugar
  • 1 medium ripe banana
  • 1 - egg
  • 1 1/4 cups low fat buttermilk
  • 2 tablespoons oil

How To Make banana oatmeal pancakes

  • Step 1
    Mix together flour, baking powder, baking soda, oats and sugar. Set aside.
  • Step 2
    In blender whirl banana until smooth. Add egg, buttermilk, and oil; whirl until smooth. Stir banana mixture into dry ingredients, blending well. If batter is too thick, add more buttermilk one tablespoon at a time. Cook on hot griddle sprayed with cooking spray.
  • Step 3
    Serve with warmed applesauce and cinnamon.
