These waffles are healthful creations that cross the culinary borders to capture American love for waffles and their growing popularity in India into one indispensable recipe. In India, waffles are slowly losing the label of being just a Western novelty. Now, Indian people enjoy snacking on waffles as they shop in many of their malls. They top them with fresh fruit and/or drizzle them with chocolate syrup. Mine are crunchy on the outside and sweet and gooey on the inside. These waffles allow to experience the wonderful flavors and the rich food culture of India in a form that is familiar.

Ingredients

  • 1 1/2 c
    whole-wheat pastry flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 1/2 tsp
    pumpkin pie spice
  • 1/2 c
    canned 100% pure pumpkin puree
  • 1/2 c
    low-fat milk
  • 1/3 c
    plain low-fat yogurt
  • 1
    egg
  • 1
    ripe medium banana, peeled and mashed
  • 1
    ripe large banana, peeled and cut into ¼-inch pieces
  • 1
    ripe mango, peeled and cut into 1/4-inch pieces
  • ·
    canola oil spray for greasing
  • ·
    dark chocolate syrup or light agave nectar or maple syrup or truwhip (optional)

How to Make Banana-Pumpkin Waffles

Step-by-Step

  1. Whisk together flour, baking powder, baking soda, and pumpkin pie spice in a small mixing bowl.
  2. In a bowl of electric mixer, lightly beat pumpkin puree, milk, yogurt, mashed banana, and egg.
  3. Add the dry ingredients to the wet and mix until combined (the batter will be thick).
  4. Using a rubber spatula, stir half of banana and half of mango pieces into the batter.
  5. Preheat the waffle iron.
  6. Grease the waffle iron with canola oil spay and ladle 2 ounces (1/4 cup of batter) into the iron. Close the iron top and cook until the waffle is golden and crisp on both sides and can be easily removed from the iron. The waffle iron’s indicator light should signify that cooking is completed. Remove the waffle from the iron with a pair of tongs. Top each with pieces of fresh mango and banana and/or chocolate syrup, light agave nectar, maple syrup, or Truwhip. Serve and enjoy.
