I always want something sweet for breakfast, but I dont want the calories. this is my solution. and you can make the batter ahead of time.

Ingredients
- 1/2 cup canned pumpkin
- 1 large apples, golden delicious, chopped
- 1 cup splenda for baking, brown
- 2 teaspoons pure vanilla extract
- 1 pinch salt
- 2 cups dry oats
- 2 teaspoons pumpkin pie spice
- 1 large egg
- 1 1/2 cups almond milk, unsweetened
How To Make baked oatmeal cups

Step 1preheat oven to 350 degrees, line muffin pan with liners or spray with non-stick spray

Step 2combine all wet ingredients in seperate (larger) bowl, combine dry ingredients

Step 3add wet ingredients to dry ingredients, then add chopped apple, mix well . store in fridge overnight if not ready to bake.

Step 4fill muffin tins pretty much all the way (these dont really rise). and bake approximately 15-20 minutes or until toothpick inserted comes out clean. you can pretty much enjoy these right away.
