You can substitute with your favourite bean if you prefer, but please use real maple syrup in this recipe. I hope you enjoy this simple comfort food.

Ingredients

  • 2 cups dried, yellow eyed beans
  • 12 cups cold water (for soaking)
  • 1 whole, sweet onion, peeled
  • 1/4 cup brown sugar
  • 1 1/2 tsp teaspoons dry mustard
  • 1 1/2 - 2 tsp sea salt
  • 1/2 tsp fresh ground black pepper
  • 1/4 cup fancy molasses
  • 1/4 cup maple syrup
  • 1/2 lb bacon, diced
  • 2 - 3 cups water, boiling

How To Make baby kato's yellow eyed beans

  • Step 1
    Prepare the dried beans: Wash and rinse the yellow eyed beans in cold water. Soak the beans in 12 cups of fresh cold water overnight.
  • Step 2
    Next morning, preheat oven to 250 degrees. Drain the beans, then cover them with 12 cups of fresh cold water. Let the beans come to a hard boil, then simmer, uncovered, until the skins split, when they are blown upon. Once they split, drain the beans and put then into a bean pot or a large casserole dish. Place the whole onion in the middle of the beans, making sure to cover it, well.
  • Step 3
    Mix all the remaining ingredients except for the bacon and pour them over the yellow eyed beans and onion. Mix the diced bacon into the bean mixture and add just enough boiling water to cover the beans. You can gradually add a little more boiling water during cooking, if necessary to keep the beans from drying out.
  • Step 4
    Baked the covered beans in a 250 degree oven for 8 hours. Remove the lid during the last 30 minutes of cooking.
