This recipe is from Hungry Girl 300 under 300 by Lisa Lillien. It serves one but it is so much it doesn't all fit in my cereal bowls. I have made it twice and have struggled to eat it all both times!

- 1/2 cup old fashioned oats
- 1/2 cup apple, chopped
- 1 tablespoon sugar free pancake syrup
- 1 teaspoon fat free non-dairy creamer
- 1/2 teaspoon cinnamon, or to taste
- 1/2 teaspoon vanilla extract
- dash salt
- 2 - no calorie sweetener packets
- 1 cup unsweetened vanilla almond breeze

Step 1Combine all ingredients in a nonstick pot on the stove. Add 1 cup water and mix well. Bring to a boil, and then reduce to a simmer

Step 2Cook for 12 to 15 minutes, stirring frequently, until very thick and creamy.

Step 3Transfer to a bowl, allow to slightly cool and thicken, and then dig in!
